Now I love to cook- but I don’t often do it because it’s just me and my dog here and I HATE eating the same thing for days on end…. and I hate figuring out how to cook just ONE single portion of something! However, this summer I’ve been trying out some new summer recipes and trying to stop buying so many frozen meals!! Here are some of the FAVORITE summer recipes ones I’ve found. Enjoy!

Summer Recipes
BLT Pasta Salad
This pasta salad combines three great foods: bacon and tomatoes, with pasta noodles (and lettuce!) for a perfect side dish that will definitely please everyone at your next cookout.
All you need are some of the following:
cooked pasta, bacon, tomato, lettuce, mayonnaise and salt & pepper.
The instructions are SUPER simple. Just mix everything together then enjoy!
you’ll need bacon, lettuce, tomato, mayonnaise, salt & pepper on the side (to taste), penne pasta (or any other type!), and olive oil. First cook your penne according to the instructions on the package. Next fry up your bacon until crispy then set it aside but keep the grease in your pan; when done frying add your lettuce and tomatoes into the pan with some salt & pepper just like you would if you were making
Grilled Strawberry Sundae
Forget ice cream, this strawberry sundae recipe is worth making all year round (but especially in the summer)! All you need is some vanilla ice cream, whipped cream, whole strawberries, sliced almonds (optional).
First lay out the whole strawberries on a grill pan or skillet so they’re slightly overlapping each other in a single layer. Cover with aluminum foil to prevent any of them from burning and set aside for 10-12 minutes while waiting for your grill to heat up. Give it a few minutes to get nice and hot once it’s ready, you can start grilling! You’ll want to check in on your aluminum covered concoction and once they’re grilled to your liking, remove them from the grill.
Fill a bowl w a heaping serving of ice cream, whipped cream, and almonds (if desired) and top with those delicious grilled strawberries and you are good to go! If you’re feeling adventurous you could also make this with chocolate or strawberry ice cream, or even top with chocolate sauce!
Chili Lime Shrimp Tacos
These tacos are so good!
The first thing you need is some olive oil, soy sauce, white vinegar and crushed red pepper flakes. You’re also going to need a lot of spices to make the nice “chili lime” taste! I like to use a little chili powder, garlic salt and paprika. You can mix everything up in the bowl until it’s all combined then set it aside for later.
Next, heat your pan over medium high heat and add some olive oil to coat the bottom of the pan. Once that’s heated through, add your shrimp and cook them until they start turning pink on both sides. You’ll want to remove them from the pan onto a plate lined with paper towel so they can cool down.
I like to let them cool down for a few minutes, then I toss them into my “chili lime” seasoning bowl from the beginning. Voila, chili lime shrimp tacos! You can add the shrimp to whatever tortillas of your preference-corn or flour and then add in whatever toppings you like. I usually like to add in tomatos, shredded cheese and lettuce as well.
